That\u2019s 25 percent less beef being produced.<\/p>\n<\/div>\n<div>\n<p class=\"font--body font-copy gray-darkest ma-0 pb-md \">Some of the slowdown is because of facility closures. Two of the seven largest U.S. facilities \u2014 those with the capacity to process 5,000 beef cattle daily \u2014 are closed because of the pandemic.<\/p>\n<\/div>\n<\/blockquote>\n<p>And the consequences are not how I would have predicted them, because of course I&#8217;m not a <em>freakin&#8217; expert<\/em>:<\/p>\n<blockquote><p>\u201cThe first problem is we don\u2019t have enough people to process the animals, and number two is they can\u2019t do carcass balance because restaurants are down,\u201d he said. \u201cWhat\u2019s selling? Freaking hamburger.\u201d<\/p>\n<p>Restaurants typically use the expensive stuff \u2014 strips, ribs, tenderloins and sirloin, Bormann said, while retail takes the chucks and rounds and trims.
